Granola recipe

I125g butter

125ml honey

125ml maple syrup

Juice and zest of 1 orange

150g pecan nuts

150g cashew nuts

200g pumpkin seeds

200g sunflower seeds

250g dried cranberries

250g jumbo oats

250g porridge oats

Preheat oven to 180 centigrade.

Melt the butter, honey and maple syrup in a pan over a low heat. Add the orange juice and zest.

Put the oats, nuts and seeds in a bowl and stir. Add the melted butter mixture and combine.

Lay onto a lined baking tray and flatten well so it’s nice and compact. Bake for about 20 mins - check and cook further if needed. It should be a light brown colour.

Leave to cool completely before breaking up into pieces. Add the cranberries. Put in a container and store in the freezer. It can then be eaten straight from the freezer.

You can adjust the quantities of nuts and seeds to your taste.
